You will need

  • 2 diced beetroots
  • 50g spinach
  • 30g feta
  • 3 handfuls of chickpeas
  • 1 spring onion
  • Mixed seeds
  • ½ lemon
  • 1tbsp olive oil

Method

  • Place all ingredients into a salad bowl, drizzle with olive oil and lemon juice.
  • Season to taste and serve.
