|Medium sized free range eggs||6|
|Grated Mozzarella cheese||1/2||1/2||Cup|
|Oregano or chopped fresh basil||1||1/2||Tsp|
|Ground black pepper||1/2||1/2||cup|
|1 tin organic chopped tomatoes||400||g|
|Chopped red onion||2||Tbsp|
|Ketchup or brown sugar||1/2||Tbsp|
|Chilli powder or 1 chopped green chilli (optional)||1/4||Tsp|
|Vegetable Toppings of your choice|
1- Whisk your eggs with salt, oregano and grated mozzarella cheese.
2- Heat a non-stick frying pan on medium flame, add your omelette mix, cover and cook on low heat
3- For your pizza sauce, heat oil in a pan then add chopped garlic & red onions for 1min until brown, then add your tin of chopped tomatoes. Add the remaining ingredients.
4- Turn your omelette with the help of a plate and layer with your sauce and toppings
5- Turn your grill on max and place your omelette under the grill until your cheese melts
