An absolutely delicious salad that will keep you full until your next meal. I love adding quinoa to my salads as it adds not only that extra bit of fibre to my diet but also really completes the dish. Sometimes I add grilled chicken or salmon for added protein if I want a bigger meal but it is also so easy and tasty on it’s own. Did I mention its vegan, gluten and dairy free?!

Here’s what you need:
1 cup of cooked quinoa
1 cucumber
2 roma tomatoes or cherry tomatoes
1 avocado
1/2 red onion
Fresh mint

1/2 lemon
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste
