You will need

  • 2 eggs
  • 2 portobello mushrooms
  • 100g spinach
  • Avocado or olive oil
  • Chilli flakes


  • Scramble the eggs in the oil in a warm pan
  • Add the mushrooms and fry until cooked.
  • Microwave the spinach or wilt in the pan with the eggs.
  • Once the eggs, mushrooms and spinach have cooked, put on a plate ready to serve.
