You will need
- 2 eggs
- 2 portobello mushrooms
- 100g spinach
- Avocado or olive oil
- Chilli flakes
- Scramble the eggs in the oil in a warm pan
- Add the mushrooms and fry until cooked.
- Microwave the spinach or wilt in the pan with the eggs.
- Once the eggs, mushrooms and spinach have cooked, put on a plate ready to serve.
