Sugar free afternoon snack, I am definitely someone who loves a mid-afternoon snack to get me through to the evening and these do not disappoint!

Sweet treats don’t always have to be loaded with sugar, naturally sweetened muffins are one of my favourites.

Quick and easy and a great way to get rid of those over ripe bananas – we always have them!

• Mash 2 x bananas
• Add vanilla essence
• Whisk in two eggs
• Add 1/2 teaspoon of baking powder
• 1-2 cups of flour. I used spelt
• Mix in dark chocolate chips (ok a tiny bit of sugar but they are dark) or nibs and nuts, I added pecans
• Divide equally into muffin tray and cook for 20-25 mins @ 180
• Enjoy warm or cold
