
You will need
- 300g turkey mince
- ½ finely diced onion
- 1 crushed garlic cloves
- 5g fresh coriander
- 1tsp paprika
- 1 beaten egg
- 1tbsp coconut oil
- 2 diced celery sticks
- 2 tsp fresh rosemary
- 400g canned tomatoes
- 2 courgettes / courgetti
Method
- Preheat the oven to 180 degrees Celsius
- Put the mince, half the onion, the garlic cloves, coriander, paprika and eggs into a bowl, combine with your hands and season with salt and pepper. Roll into small balls and set aside in the fridge.
- In a heated pan, place the tomatoes, remaining onion, celery, rosemary, salt, pepper and simmer for 10 minutes.
- Place meatballs into a roasting tin, pour over tomato sauce and cook in the oven for 20 minutes, serve with spiralised courgette.
