You will need

• 1 egg
• ½ avocado

For the fritter
• ½ sweet potato
• ¼ cup flour
• 1 beaten egg


  • Mix the grated sweet potato, flour and egg in a bowl until the ingredients have fully mixed.
  • Heat some oil in a pan and fry the fritter until both sides are golden brown. Cook slowly to gain an even colour.
  • Once cooked through serve with a dippy egg and some avocado.
