Speedy Prawn Stir Fry

SPEEDY SUPPER….I love a healthy but quick meal that all the family can enjoy.

Prawns are a rich sauce of selenium, one of the most effective antioxidants at maintaining healthy cells PLUS full of zinc which is great for immunity. They are also full of phosphorous, vitamin B & E, copper and magnesium which is great for bone health – something we all need as we head into our late 30’s / 40’s as hormones change.

Ingredients
– Chopped onion & garlic
– Selection of vegetables. I used beansprouts, broccoli, kale, spinach, soya beans etc
– Pre cooked rice @tildarice I love wild rice but used basmati here (for the kids)
– Add fish oil, soya sauce, mirin rice/sesame oil to taste
– Stir fry fresh prawns
– Add more spinach for even more vitamins, minerals fibre & carbs

Method
Throw together in a non-stick pan and enjoy!
